]]>We interviewed founder Pandelis Siounis and CEO Dimitri Georgoulas to learn more about their journey.
In 2004, fresh out of hotel management school, Greek-born Pandelis Siounis dreamt of starting his own business. 鈥淎thens was hosting the Olympic Games and having worked in several Greek restaurants that served loukoumades, I got the idea to create a company specialising in these traditional Greek donuts,鈥 he recalls. Thus, Mr. Puffs was born, marketing the very treats that were distributed at the Olympics over 2,000 years ago.
It鈥檚 fair to say that Canadians have been quick to adopt these little morsels. After being sold under a tent at events and festivals, in a food truck, and then at the first branch in Quebec, Puffs made a notable appearance on the Dragon鈥檚 Den television show.
Since 2016, 72 franchises have been opened, including 46 in Quebec and 26 in Ontario. Mr. Georgoulas, CEO of Mr. Puffs, assures us that the company is focused on establishing a presence in all Canadian provinces, but major efforts are currently underway to expand globally. The first international franchise will soon open in Austin, Texas. Convinced that the U.S. market could be fertile ground for the company, the team is making every effort to study it thoroughly and position itself in the best possible way. Europe, North Africa, and West Asia are also in the company鈥檚 sights.
鈥淥ver 250 million Puffs have been sold to date. If you put them end to end, you could stretch across Canada from one ocean to the other. Our goal is to go across the world!鈥

Acknowledging the warm welcome it has received from consumers over the years, the Mr. Puffs team seizes every opportunity to give back. 鈥淒uring the pandemic, we froze franchisee loyalty rates and filled trucks with Puffs to distribute to essential workers,鈥 says Mr. Georgoulas.
Mr. Puffs has also made significant donations to several foundations, including over $250,000 for breast cancer and multiple sclerosis research, and $150,000 for youth soccer. 鈥淲e鈥檙e proud to have achieved a level of success that allows us to give back to the community,鈥 Mr. Georgoulas adds. 鈥淲ith the current difficult economic climate, we鈥檝e also decided not to increase our in-store prices this year.鈥
For the past 20 years, the basic recipe of Mr. Puffs has remained the same. Egg and milk-free, the Canadian company鈥檚 loukoumades are light and fresh, and the available toppings can be decadent. It鈥檚 this feeling of biting into a little cloud that inspired the company鈥檚 name. Despite this consistency, there has been a remarkable evolution in the range of products on offer.
Mr. Puffs has become a full-service dessert bar, serving delicious loukoumades, as well as ice cream and coffee. As part of its ongoing drive for innovation, the company is currently running a pilot project to offer spreads for sale in grocery stores.

Price Deka-Mr Puffs from on .]]>The Saint-Jean-sur-Richelieu branch will welcome its first customers in the last two weeks of January 2020, explains Claude Philippon, one of the two franchisees.
The business will occupy approximately 1,500 square feet in a building that is currently under construction. This is located to the south of the building in which Souvlaki Bar and La Belle & La B艙uf are located. This new building of approximately 4,200 square feet will also house K眉to Comptoir 脿 tartares as well as another restaurant.
Mr. Puffs will have approximately 22 seats. During the summer season, a terrace will also be set up. 鈥淢r. Puffs is more of a take-out dessert bar,鈥 explains Billy Siounis, president, CEO and founder of Mr. Puffs, in an interview with Le Canada Fran莽ais.
Donuts
Mr. Puffs specializes in traditional Greek donuts. These are also called loukoumades. Their existence dates back to ancient Greece. 鈥淧uffs are made and iced in front of people. They are always served hot and freshly prepared. It鈥檚 a vegan dough without eggs, lactose, cholesterol and trans fats,鈥 says Billy Siounis.
The dough is made from wheat and the fritters are cooked in canola oil. 鈥淚t鈥檚 like Timbits but lighter because our dough is made with yeast. The outside of the donut is crispy and the inside is soft. It鈥檚 so light that you can鈥檛 eat just one,鈥 says the founder. Depending on the customer's wishes, the donuts can be topped, for example with honey or maple syrup.
He emphasizes that his loukoumades are sold in formats of 12, 30 or 50 units. The menu is rounded out with ice cream, milkshakes as well as specialty hot or iced coffees.
Jobs
The arrival of Mr. Puffs will create 20 to 30 full-time and part-time jobs. The investment required has not been quantified. The place will be managed by two franchisees, Daniel Dub茅 and Claude Philippon. 鈥淭hey have experience in restaurants, are from Saint-Jean-sur-Richelieu and know how to manage a restaurant well,鈥 underlines Mr. Siounis.
If selling desserts to consumers is synonymous with selling them happiness, Claude Philippon emphasizes that he and his partner also like the concept of work which reduces the effects of the labor shortage. 鈥淚t鈥檚 a good system where each employee can replace his colleague. In a conventional restaurant, we will not see a waiter replacing a cook and vice versa,鈥 he explains.
He and Mr. Dub茅 also want to be able to introduce their children into the business in order to ensure succession.
Festival
Mr. Puffs is present at all major festivals in Montreal. Billy Siounis says that one of his chain's mobile kiosks will be present next year at the International Hot Air Balloon Festival in Saint-Jean-sur-Richelieu.
Mr. Puffs has 15 branches in Quebec, including one in Quartier DIX30. Sainte-Julie and Pointe-aux-Trembles will have theirs soon. That of Saint-J茅r么me should open approximately at the same time as that of Saint-Jean-sur-Richelieu.
Mr. Siounis, who founded his company in 2004, aims to have around thirty addresses in Quebec. It will open a branch in November in Florida. In addition, Ottawa and Toronto will also have theirs.
